Lunch Lady Brownies Recipe

Do you remember having brownies like this on the elementary school lunch menu?

Honestly, I don’t think we ever had lunch room brownies like this, but I do associate this retro recipe with the bake sale brownies I enjoyed all throughout the 80’s and 90’s.

I found this recipe for lunch lady brownies in an old church cookbook. Apparently, the author used to work in one of the local schools. You guessed it, she was a lunch lady herself!

Easy Homemade Brownies

I’ve become so lazy about making brownies. It’s so easy to turn to a boxed brownie mix, but once you try these delicious lunch lady brownies you’ll be glad you have a homemade option!

You’ve probably seen similar lunch lady brownies on Pinterest. There’s a good reason. These are so yummy!

The simple ingredients for these old-fashioned brownies include:

melted butter
cocoa powder
sugar
eggs
vanilla
and flour

How to Make Lunch Lady Brownies

First, preheat your oven to 350 degrees. Lightly spray a 9×13 inch baking pan with non-stick cooking spray.

Now, in a medium bowl, whisk together the butter and cocoa powder until smooth. Now stir in the sugar, eggs and vanilla. Stir in the flour just until combined. Spread into prepared pan and bake for 20 to 25 minutes. 

Remove from the oven and allow to cool 10 to 15 minutes. Spread on the frosting while the brownies are still warm.

Note: I mixed my batter by hand using a wooden spoon, but you can use an electric mixer. Just be careful not to over mix the batter.

Of course, you can always use your favorite can of store-bought frosting, but mine is SO MUCH BETTER.

Homemade Brownie Frosting

Here’s what you’ll need to whip up this classic brownie frosting. It goes perfect with my lunch lady brownies!

butter
milk
cocoa powder
and powdered sugar

Using an electric mixer beat the butter until smooth.

Now, just add the milk, cocoa powder and about half the powdered sugar and beat until combined. Add the remaining sugar and beat until the frosting is smooth.

How Long Do Brownies Last?

For best results, you should place your brownies in an airtight container or cover with foil or plastic wrap. When properly stored, your brownies will last for about 3 to 4 days when left out on the counter at room temperature.

These moist and chewy lunch lady brownies are totally addictive. You’ll have a hard time eating just one!

  • ¼ cup milk

  • 3 cups powdered sugar

Instructions

  2. In a medium bowl, whisk together the butter and cocoa powder until smooth. Stir in the sugar, eggs and vanilla. Stir in the flour just until combined.
